Corn-on-the-Cobcakes

I saw this lovely recipe the other day when I received my Woman's Day magazine in the mail. I can't get over how adorable it is and I will definitely be making them for Fourth of July!


  

Recipe Ingredients

   
    • 2 large eggs
    • 3/4 cup canola oil
    • 1 1/4 cups plus 5 Tbsp whole milk
    • 3 tsp pure vanilla extract
    • 2 1/2 cups all-purpose flour
    • 1 1/2 cups granulated sugar
    • 1/2 cup yellow cornmeal
    • 2 tsp baking powder
    • 1/2 tsp plus pinch kosher salt
    • 3/4 cup (1 1/2 sticks) unsalted butter, at room temperature
    • 1 16-oz box confectioners’ sugar
    • 16 corn holders, assorted yellow and white jelly beans, 4 yellow fruit chews (such as Starburst), black and white sanding sugar, for decorating

Recipe Preparation

      
    1. Heat oven to 350°F. Line two 12-cup muffin tins with yellow or white paper liners. 2. In a medium bowl, whisk together the eggs, oil, 1 1/4 cups of the milk and 2 tsp of the vanilla. 3. In a large bowl, whisk together the flour, granulated sugar, cornmeal, baking powder and 1/2 tsp of the salt; make a well in the center. Add the milk mixture and stir until fully incorporated. 4. Divide the batter among the muffin cups (about 1/4 cup each) and bake until a wooden pick inserted in the center comes out clean, 20 to 22 minutes. Let cool for 5 minutes before transferring to a wire rack to cool completely. 5. Meanwhile, make the frosting: Melt the butter in a medium skillet over medium heat, then cook, swirling the pan until the butter begins to brown and smell nutty, 3 to 4 minutes; remove from heat. 6. Using an electric mixer, beat the browned butter, confectioners’ sugar, pinch of salt and the remaining 5 Tbsp milk and tsp vanilla until fluffy, 3 minutes. 7. To decorate: Working with 3 cupcakes at a time, frost, then arrange rows of jelly beans close together on each cupcake. Place them side by side on a plate or platter and insert the corn holders at each end so they resemble an ear of corn. Cut a fruit chew horizontally in half; flatten one half slightly and place on top of the corn to resemble a pat of butter. Sprinkle with the sanding sugars to mimic salt and pepper. Repeat with the remaining cupcakes.

Miscellany Monday

Happy Monday everyone!

one. I had to work on Sunday morning and when I went to my boyfriend's house after work, he had these babies waiting for me...


Four little mini cupcakes from Sweet! By Good Golly Miss Holly. It's a local cupcakery here in Orlando. He got me two banana and two red velvet, my two favorite flavors! YUM.

two. One of my classes this semester is driving me crazy! It's my Hospitality and Tourism Marketing class. It's a hybrid class which means it's half lecture and half online. Because we only meet in person once a week, I feel like I never know what's going on in that class. I hate feeling lost.

three. My brother has moved out of the house and now I get his bigger room! I am so excited! This means I get a bigger bed with a new bedspread and everything. I can't wait to have more space. My tiny room is so cluttered with stuff because I have outgrown it. I have been looking at bedspreads online and everything but haven't found one I love yet. I will be posting more in the next few weeks about my room transformation!

four. This weekend I have another bridal show to work! I think it's so much fun to interact with future brides :)

five. On a sad note, please pray for my boyfriend's grandfather. He was just diagnosed with colon cancer and it's been hard on both Rusty and his family. Rusty and I went to visit his grandparents on Saturday and that is when his grandfather told him the bad news. His grandfather is being very stubborn about treatment and refuses to stay overnight in the hospital so please pray for him.

I am loving that Friday is Christmas Eve!

I am loving that tomorrow my boyfriend took the whole day off :)

I am loving that the boyfriend and I are going to see Blue Man Group for our one year anniversary. I have always wanted to go because it looks like it would be interesting and entertaining!
     
       
I am loving these cute little cupcake key covers I got from Fredflare! I put them on my keys yesterday and my boyfriend even let me put them on his too (hehe).
       

I am loving that I have wrapped all of the Christmas gifts I can. I am still waiting on some to come in the mail though...I wish they would hurry up!

I am loving my family and boyfriend. They are always there to pick me up when I am down.

Miscellany Monday

Miscellany Monday @ lowercase letters

one. Our plants are now in the garden! On saturday afternoon, the boyfriend and his brother moved all of the babies from their pots to the ground. The seven garden beds are complete with wood on either side and green garden netting on top to keep animals out.

two. The boyfriend and I are thinking about going to Colorado sometime in December. My aunt and uncle live there with my cousin Jessica and he has a friend he wants to visit so I think it would be a fun trip! Plus we would get to see snow which would be a huge contrast from the Florida weather we are used to.


three. I can't stop thinking about Thanksgiving. I have been watching the Food Network nonstop because all of the turkey recipes look so yummy. One of my favorite Thanksgiving episodes was from Claire, the host of 5 Ingredient Fix. You can see her recipes, shopping list, and cooking timeline here.

four. I went shopping yesterday for two of my friends who have birthdays coming up and MAC (Makeup Artist Cosmetics) has some great little holiday gifts. Their theme this year is Scottish plaid and so cute!


five. I found these cool little cupcake liners at the grocery store. They are Staybrite Cupcake Liners from Reynolds brand and they don't fade after baking your cupcakes!



mmm...I need to bake some cupcakes soon. I'm thinking pumpkin spice flavored!

This is Halloween

Happy Halloween everyone!
Last night my boyfriend and I had so much fun at the party we went to. I spent most of the day making cupcakes to bring to the party and then I had to work at 6 so it ended up being a late night and I am sooo tired but at least today I have the day off :)

For the party, I made little chocolate spider cupcakes. They had Twizzler legs, Reeses Pieces eyes, and candy corn fangs. They were also covered in yummy chocolate sprinkles. They were a big hit!


I knew for a while what I wanted to be for Halloween but trying to find something for my boyfriend to be that matched mine was hard.

But after thinking for a while, I came up with a wonderfully corny idea...

a cupcake & muffin duo!





My costume consisted of a brown tulle skirt to look like the bottom of a cupcake, and a white tank top covered in different colored pom poms to look like sprinkles. The costume was even topped off with a cherry headband that I made from glittery red foam.

Rusty's costume was simply a brown T-shirt covered in blue poms poms so that he would resemble a blueberry muffin.
(he was a trooper in letting me embarass him haha)

To top off the corniness, I added the lettering on back :)

Tonight I absolutely cannot wait to see my little brother and sister all dressed up to go trick-or-treating. It will be so cute and I am so excited!

On a sad note though...tonight is the last night I get to spend with my boyfriend before he goes on his business trip tomorrow. Ugh I will miss him so incredibly much.

Day 6: A Picture of Something That Makes You Happy

Hello there. It's kind of ironic that today's blog challenge is a picture of something that makes you happy because today is just not turning out the way I wanted it to. In addition to not feeling well, I was supposed to see my boyfriend this morning and we both didn't wake up in time, plus we are just not meshing well this morning. Ever have that happen to you? You both just wake up on the wrong side of the bed and have an off day? Well it sucks. I was so looking forward to seeing him this morning and now I won't see him until maybe tonight because he is helping his cousin move all day long.


Putting that aside, a picture of something that makes me happy...hmmm...




Definitely this wonderful red velvet cupcake I ate on my birthday this past year. Regardless of how I am feeling, cupcakes always put a smile on my face :)


More cupcakes! These are some red velvets I made on Fourth of July. They were soooo yummy.
Goodness this blog post alone just helped me feel a bit better :) Yay for the power of cupcakes.
